What is a White Mocha?

A mocha is an espresso-based coffee beverage made with chocolate sauce or cocoa powder. Traditionally, it’s made with powder, but these days you can use any form of chocolate. A white mocha is the same thing, but made with white chocolate or white chocolate powder.

The taste is much lighter and creamier compared to a regular mocha. You’ll sometimes also find it referred to as a white chocolate mocha or white chocolate latte.

What is a White Raspberry Mocha?

Now, a white raspberry mocha is a white mocha with raspberry syrup or puree. You can make fruity white mochas with basically any fruit, but the most popular are strawberry and raspberry. I normally only really see these around Valentine’s Day, probably because of the color and the fruity flavor. Raspberry is always associated with Valentine’s Day for some reason!

Now, raspberries taste amazing with creamy flavors, so in a white mocha, it’s great. You get that tart, slightly sour, and sweet flavor that’s balanced perfectly with the white chocolate. I looooooove black raspberry and white chocolate in ice cream, so this raspberry white mocha is right up my alley.

Does Raspberry Taste Good With Coffee?

I think raspberries taste good with coffee, but mostly when sweetened. Raspberries on their own aren’t very sweet and can taste woody and tart. It can bring out the fruity notes in pour-over coffee, which is nice when you want a brighter flavor. However, in a latte, you definitely want some sweetener, otherwise the berry tastes muted.

I think other fruits that pair better with coffee, like cherry, blueberry, and orange, but raspberry is not bad!

White Raspberry Mocha Recipe: Ingredients

Here’s what you’ll need to make this white raspberry mocha at home:

  • White Chocolate — I use white chocolate chips since they’re small and melt fast, but you can use pieces of a white chocolate bar or individually wrapped chocolates. You can also use white chocolate powder or condensed milk as a substitute.
  • Milk — I use 2% or whole milk normally, but feel free to use whatever milk or milk alternative you like. I recommend oat milk because it’s creamier.
  • Ice
  • Espresso — A standard mocha or latte has 2 shots of espresso, but you can use 1 shot or decaf if desired. Use your favorite bean and coffee machine! You can also use instant espresso powder or a stovetop moka pot.
  • Raspberry Syrup — I make a homemade raspberry syrup for this drink, which is super easy to make. You can also use a store-bought raspberry syrup or raspberry jam in a pinch. You can also macerate raspberries and sugar together for a single serving.

How to Make a White Raspberry Mocha

  1. Buy or Make Raspberry Syrup. Make raspberry syrup by combining 2 parts raspberries to 1 part water and 1 part sugar. Heat it up in a pot and simmer until slightly thickened. It’s that easy! You can also use raspberry jam or store-bought syrup for convenience, but homemade tastes best.
  2. Brew Espresso. Add white chocolate to your espresso cup and brew 1 – 2 shots of your favorite espresso beans on top. Use an espresso machine or stovetop moka pot. You can also use instant espresso powder.
  3. Melt Chocolate. Once the espresso brews, stir the chocolate and coffee well until the chocolate melts completely. If there are grains or streaks of chocolate, you might need to microwave it until it melts completely.
  4. Assemble Drink. Add ice, raspberry syrup, and milk to a separate glass, then top off with your white chocolate espresso. Add more raspberry syrup on top for a cool effect.
  5. Mix and Enjoy! Stir to combine and enjoy!

Tips for the Best White Mocha

  • Add Vanilla or Condensed Milk: If you want a creamier flavor, add a little bit of vanilla extract or condensed milk! This will amp up the creamy flavor and balance the raspberry and coffee better. Sometimes white chocolate doesn’t taste milky, but more fatty from the cocoa butter or oils in it.
  • Mix the Syrup into the Espresso: To get an evenly flavored drink, melt both the chocolate and syrup into the hot espresso. That way, all the flavors dissolve or melt, and you’ll be able to enjoy your mocha right away without any extra stirring. Although it doesn’t look as pretty when it’s all mixed in.

FAQ’s

Do I need espresso?

No, although espresso is the default, there are many espresso alternatives you can use in this mocha. The most convenient is instant espresso powder, where you combine some hot water with the powder to make espresso. You can also use coffee concentrate or a manual espresso maker like an Aeropress, Moka Pot, or manual espresso machine.

Can I use raspberry jam?

No syrup or fruit available? Raspberry jam is the next best thing! It’s already sweetened, so you don’t have to worry about adding extra sugar, and a little goes a long way. The only downside is that the main flavor is sugar, not fruit, so it might taste more like raspberry candy than a sweetened raspberry.

How to make raspberry syrup?

You can macerate equal parts raspberry and sugar by weight, and use the juices that draw out as your syrup. That’s the best flavor since it’s straight from the fruit itself. However, you can also make a classic syrup by simmering it on the stove with water to make a raspberry simple syrup. Both ways work!

This drink is SOO fricking good, and the white chocolate adds this really really nice aroma/sweetness that supports the raspberry syrup in this latte. It provides this soft, subtle fullness to the drink overall, and it’s lowkey kinda addicting because I couldn’t stop going for another sip. Also, the raspberry + latte combo is just pure *chef’s kiss*
