Why Make a Tofu Matcha Latte?

Now, you’re probably wondering, “Why should I use tofu in a latte?” Won’t the tofu be too firm and have a weird texture? Doesn’t the tofu taste weird with matcha? But you’d be surprised how creamy tofu can become!

Just think of this as a fresh soymilk-like matcha latte! The tofu adds creaminess like no other, and you can make it thinner with more water. On its own, tofu tends to have a slightly soy and mild flavor, but it soaks up other flavors like a sponge.

The white chocolate does a lot of heavy lifting in terms of flavor, and you hardly taste any tofu in this latte! If someone served it to me without telling me it was tofu, I’d probably never know! But some other perks:

  • It’s vegan! Super creamy, too.
  • Great way to use extra silken tofu.
  • A creamy, not-heavy, and potentially healthy matcha latte!

Silken Tofu vs. Soft Tofu

This recipe uses silken tofu for an ultra-creamy and smooth latte, but what’s the difference between silken and soft tofu?

A lot of recipes or brands may use silken and soft tofu interchangeably, but silken tofu has a soft, almost jelly-like texture that’s perfect for blending into smoothies, lattes, mousse, etc. It’s an unpressed tofu, which is why it’s so soft!

Soft tofu is almost the same as silken tofu, but pressed slightly for a slightly firmer but still soft tofu, perfect for cooking!

You can use either type in this recipe, but silken tofu will give you the smoothest texture! Soft tofu might give you a thicker texture, so you may need to use a lower quantity in this recipe.

Can I Use Regular Tofu?

If you only have regular tofu, chances are it’s either a medium-firm or firm tofu, which is pressed to achieve a firmer and sturdier texture. This tofu is great for crumbling into food, frying, or other recipes that need a solid texture.

However, you should not substitute regular tofu for silken tofu as they have different textures and are intended for different uses. Silken tofu is much softer and more delicate than regular tofu, best for blending into creamy sauces, puddings, or desserts. Regular tofu, on the other hand, is much firmer and better for frying, stir-frying, or baking.

If you use regular tofu instead, you’ll end up with a grainy drink that has bits of tofu in it instead of a smooth, creamy drink. Unless you have an insanely powerful blender, regular tofu won’t be smooth.

What Does a Tofu Matcha Latte Taste Like?

The tofu matcha mousse and tofu matcha latte have different textures and tastes, but will blend together.

The mousse is made of white chocolate, matcha powder, and silken tofu, and the end product is a super creamy and soft mousse. The most prominent flavor is sweet and creamy, followed by a slight vanilla flavor, and an umami flavor from the matcha, which masks any soy flavor from the tofu. It’s honestly so addicting and it doesn’t feel heavy!

The tofu matcha latte is made with silken tofu, matcha powder, water, and sweetener. Because there is no milk or dairy in this, you get a strong soy flavor, followed by sweet and umami. If you’re not a fan of soy milk, you probably won’t like how soy-forward this drink is, but you can mask it by using melted white chocolate or condensed milk as the sweetener.

How to Make a Tofu Mousse

This creamy tofu matcha mousse acts as a “cream” for this tofu matcha latte! It’s basically a decadent, vegan version of the double matcha latte, which has matcha cream.

You can also enjoy this tofu matcha mousse on its own as a dessert. It’s healthy and nutritious, and so addictive.

For the tofu matcha mousse recipe, you only need 3 ingredients: white chocolate, matcha powder, and silken tofu. You can use any white chocolate you’d like, but I recommend white chocolate chips, sables, or from the bar.

You want to melt the white chocolate and mix in the matcha until there’s no powder, then blend it with the silken tofu until creamy. That’s it!

The white chocolate is the most important for flavor and thickening, but if you don’t have white chocolate, you can use yogurt or cream as a thickener.

Mousse vs. Pudding: Mousse is *basically* whipped pudding. Puddings are usually cooked and thickened with starch, so it has a denser texture, while mousse is whipped and thickened with cream, tofu, or egg whites and has a lighter, fluffier texture.

How to Make a Tofu Matcha Mousse Latte

Here’s what you’ll need to make this tofu matcha mousse latte at home:

  • Matcha Mousse:
  • 1/4 cup white chocolate chips
  • 1 tsp matcha powder 
  • 6 oz or about 3/4 cup Mori-Nu Silken Tofu Soft
  • Tofu Matcha Latte:
  • 3 oz or a little less than 1/2 cup Mori-Nu Silken Tofu Organic
  • 1 tsp matcha powder 
  • 1 cup water
  • 1-2 tsp agave or sweetener (or melted matcha white chocolate) 
  • 1 cup ice

Tofu Matcha Mousse Latte Recipe

  1. Make Matcha Chocolate. Melt white chocolate in the microwave in 10-15 second increments, stirring between sessions until smooth. You can also use a double-boiler method. Then mix in the matcha powder until no powder is visible.
  2. Blend Mousse. Blend melted matcha white chocolate and silken tofu together until no streaks of chocolate are visible.
  3. Blend Matcha Tofu Latte. Blend silken tofu, matcha powder, water, and sweetener in a blender until smooth.
  4. Assemble Drink. Add ice and soy matcha latte to a glass, then top with the tofu matcha mousse. Garnish with a dusting of matcha powder!
  5. Mix and Enjoy!

Notes

You can use less matcha if you’d like, just use half the amount in this recipe. Also using extra white chocolate in the latte itself will taste better than just regular sugar. 
 

Tips:

Want some tips for making this tofu matcha mousse latte at home?

  • Let Tofu Come to Room Temperature: If your tofu is cold and you add the warm melted white chocolate to it, the chocolate can potentially harden when it touches it. Then, you’ll end up with shards of matcha white chocolate in your tofu mousse, which won’t be smooth. Let your tofu come to room temperature before using it!
  • Use White Chocolate Chips or Bar: You can use white chocolate from chips, bars, or even sables (fancy!). They all should have a creamy and slightly vanilla flavor, and most importantly, work nicely with blended tofu. If you use white chocolate melts, your mousse might be harder in texture since it’ll be firmer.
  • Use Good Quality Matcha Powder: Of course, the star of the show! Use good quality matcha powder (bright green, fresh) for your latte! You can use either “ceremony” or “culinary” grade for this, as long as it’s still fresh and not oxidized.
