Toasted marshmallow is one of my favorite syrup flavors, ever! It’s sweet, smoky, and slightly caramelized, which is everything I want in a sweetened latte or milk tea. It’s even better with a little bit of vanilla!
The syrup tastes exactly like a toasted marshmallow, just in liquid form, which makes sense because the syrup is literally melted down toasted marshmallows, so it tastes very close to, if not exactly like, the actual thing. When you make it, it also has an interesting viscous texture that makes it fun to use!
In coffee, it acts as a sweetener and gives it a nice smoky flavor.
What is in Toasted Marshmallow Syrup?
This toasted marshmallow syrup has literally two ingredients: water and toasted marshmallows. It’s one of the easiest syrups to make! Marshmallows are just gelatin and sugar dissolved together and whipped until light and fluffy. Because marshmallows are mainly sugar, they dissolve really easily into water.
You can also add flavor enhancers to your syrup, like vanilla syrup or a pinch of salt. It will add layers to your syrup and make it more flavorful.
How to Toast Marshmallows at Home

You can bring the fun of toasting marshmallows on a campfire inside! All you need is a fire source, heatproof skewers or chopsticks, and your favorite marshmallows. Toasting marshmallows at home is also super easy.
There are a few ways to get that perfect golden brown (or char):
- Gas stove burner: If you have a gas stove, you can toast marshmallows on a skewer while rotating them over the middle of the burner (hottest part). Hold them close enough to toast but not so close that they catch on fire and rotate constantly. It’ll burn if you let your marshmallow roast on one side too long!
- Butane kitchen torch: Kitchen torches are a fancy way of toasting things nowadays. Torches give you precise control over the level of toastiness and are fantastic for achieving that perfect golden-brown hue. Plus, it’ll save your fingers from constantly turning the marshmallow skewer.
- Lighter: A lighter can work in a pinch without fancy tools or a stovetop burner. Keep the flame underneath the marshmallow while you rotate it for an even toast. This method may take a while… but it works!
- Broiling: If you have an oven or toaster oven, you can add a baking tray of marshmallows and broil them until golden brown. The catch is that only one side of your marshmallows gets brown unless you flip them over.
- Grill: You can use the heating element in your grill to toast marshmallows! Coals work even better.
Best Marshmallows to Use
You can use any marshmallow to make this toasted marshmallow syrup, but plain marshmallows are best for a classic toasted marshmallow flavor.
Large marshmallows are the easiest to work with. They’re large enough to toast on a skewer easily, and you don’t need many to make syrup. However, jumbo marshmallows are less convenient to work with because they’re too big.
Mini marshmallows are also easy to use; you can easily toast them in a baking dish and broil them until golden brown. Because the mini marshmallows have more surface area than a large marshmallow for toasting, you’ll get more toasted flavor in the syrup!
You can also use marshmallow fluff, although it will be more messy. You can use the same method as the mini marshmallows: scooping out marshmallow fluff into a baking dish and broiling it or going over it with a kitchen torch.
Any store-bought marshmallow works perfectly, although you can also try making your own. For better flavor, go for an artisanal or higher-quality marshmallow. They often have a creamier texture and are made with better ingredients, which will translate into your syrup.

How to Melt Marshmallows Into Liquid

The easiest way to melt marshmallows is in a pot on the stove with a little bit of water. As mentioned, marshmallows are just sugar dissolved in gelatin and stuck in a crystal foam structure that makes marshmallows so squishy and airy.
You want to add marshmallows and water to a small pot, then heat on medium heat, carefully stirring to knock out all the air and dissolve the sugar into the water. This should take about 5 minutes.
You can also use a microwave if you don’t have a stove. You can heat the marshmallows and water in a bowl in 5-10 second bursts, stirring after each session until the marshmallows liquify. Marshmallows will expand with heat, so make sure to use a pot or bowl that is big enough.
How to Make Toasted Marshmallow Syrup

You can easily make toasted marshmallow syrup at home with just two ingredients.

- 1 cup of marshmallows
Toasted Marshmallow Syrup Recipe
First, toast marshmallows until golden brown using any of the methods available to you. Once golden, add them to a small pot with water and heat them over medium heat. As they heat up, the marshmallows will expand and dissolve into the water, so use a slightly bigger pot than you think you’ll need.
Let the mixture simmer for a few minutes until the marshmallows have liquified, and constantly stir to mix the marshmallows into the water. Then remove it from heat and stir in a splash of vanilla extract for extra flavor.
You can strain the syrup to remove any marshmallow chunks or burnt pieces. In 5 minutes, you’ve got yourself a homemade toasted marshmallow syrup, perfect for drinks like a toasted marshallow latte.
Note: Due to the gelatin, toasted marshmallow syrup made with actual marshmallows will have a slime-like texture. It will be much more viscous than regular simple syrup, which is just sugar and water. So if your syrup is thick, it’s completely normal and you made it right.
How to Store Toasted Marshmallow Syrup
Once your syrup is done and cooled, store it in an air-tight container, like a mason jar, and keep it in the fridge so it lasts longer. The cooler temperature helps prevent mold growth, and you’ll be able to make larger batches and keep them for a longer period of time.
You can also use any lidded bottle or even a bowl with an airtight lid. But if you’re using this syrup often, it might be easier to go for a jar or bottle so you can pour it out easily.
How to Get Burnt Marshmallow Flavor
Of course, where there is toasted marshmallows, there are also burnt marshmallows. Anyone else here like burnt marshmallow flavor?
If you want a more burnt marshmallow flavor, toast your marshmallows until they get a nice char, then make the syrup as normal. With burnt marshmallow pieces, you’ll find little black charred pieces floating around in your syrup. You can strain it out with a fine mesh sieve to get a nice brown syrup with all the burnt marshmallow flavor but not the black bits.

- Add your toasted marshmallows and water into a medium-sized saucepot and heat on medium heat. Let the mixture come to a boil.
- The marshmallows will start to expand with the heat, so keep an eye on them to make sure it doesn't boil over.
- Constantly mix the marshamllow syrup until the marshmallows dissolve into the water and liquify. The syrup will be viscous and thicker than usual. This is normal.
- Let the syrup cool slightly before adding it into an airtight jar or container or before use. Store it in the fridge for up to 2 weeks.

- Extra flavor: To add extra flavor depth, add a splash of vanilla or even a pinch of salt to bring out the sweetness.
- Patience is key: I’ve definitely been over-excited and burnt a couple of marshmallows on accident, trying to toast them using high heat. Use low to medium heat with a gas burner and slowly rotate the marshmallow for an even toasting. If it catches on fire, blow it out quickly!
