You could make a raspberry whipped cream for this, but it wouldn’t mix in as nicely. It’s an amazing flavor combination that’s one of the best fruity matcha pairings yet.

Yes! Matcha goes really well with fruity, tangy flavors like strawberry, mango, peach, etc. However, I think raspberry tastes best with matcha when there’s a creamy flavor, like condensed milk, white chocolate, or just sweetened cream.

Raspberries aren’t that sweet and can taste very muted if you add pureed raspberries, unsweetened, to a matcha latte. A little bit of sugar brightens the flavor and makes it taste juicy and fruity!

For this drink, I use a homemade raspberry sauce made from macerated raspberries. I leave the seeds in for texture, but you can strain them out. You can also use crushed, freeze-dried raspberries for a concentrated flavor, but it’s usually more expensive than getting fresh or even frozen raspberries.

To macerate raspberries, crush equal parts raspberries and sugar by weight, then let the fruit and sugar hang out until the juices draw out. Then you’ll have the juiciest raspberry sauce or syrup! You can also turn it into a classic raspberry simple syrup by cooking the mixture on the stove with some water until slightly thickened.

For convenience, you can use raspberry jam, but it won’t be as fruit-forward. Jam is usually super sweet, so the first flavor you get is sugar, followed by a syrupy raspberry flavor.

Here’s what you’ll need to make this delicious raspberry cream matcha latte:

  • Raspberry Syrup — You can make or buy raspberry syrup, but homemade tastes best in my opinion! I like macerating raspberries for a fresh flavor, but I also use homemade raspberry syrup when I want to enjoy raspberry drinks over a couple of days. Freeze-dried raspberries are also great for a concentrated flavor.
  • Matcha Powder — Use your favorite powder! I love Ippodo’s matcha powders and Rocky’s matcha. There are so many brands out there, but the best way to decide what is best for you is to try as many as you can!
  • Milk — I use 2% milk, but whole or oat milk works great here, too. We use this in the base and cold foam.
  • Ice
  • Water — You’ll want to make hot water that’s around 175 F for the best matcha water temperature. You can also use room temperature water, but the matcha flavor will be more delicate.
  • Heavy Cream — Heavy cream with 35% milk fat or more is ideal. Half and half won’t whip as nicely.
  • Beetroot Powder (Optional) — Raspberries alone don’t make the cream very pink, so you can add a little bit of beetroot powder to make the color brighter. A little goes a long way!
  • Vanilla Extract (Optional) — I love adding a little bit of vanilla to the cream to make it taste creamier!

  1. Buy or Make Raspberry Syrup. Use a store-bought syrup or make homemade raspberry syrup or sauce! I like macerating equal parts raspberries to sugar by weight, then letting the juices draw out.
  2. Whisk Matcha. Sift matcha powder into a matcha bowl, then add hot water. Whisk vigorously with a chasen in a zigzag motion until frothy. The foam should be velvety and have small, tight bubbles.
  3. Whip Raspberry Cream. Add raspberry syrup, heavy cream, and milk to a small cup or bowl. Then, using a handheld frother, whip the cream until soft and fluffy. Stop before stiff peaks, when the cream is still pourable.
  4. Assemble Drink. Add ice, raspberry syrup, and milk to a separate glass, then top with the whisked matcha. Add the raspberry vanilla cold foam on top and garnish with pink sugar, a raspberry, or beetroot powder.
