What is a Raspcherry Cheesecake Latte?

A latte inspired by raspberry cheesecake! There are many ways you could make this drink, but my recipe uses macerated raspberries in the latte, followed by a sweet cream cheese foam. You get the best and freshest flavor this way, without any artificial flavors or sugars.
I like to mix a little bit of sweet cream cheese into the latte, too, for extra cheesecake flavor.
Does Raspberry Go With Coffee?
Yes! It’s hard to find a fruit that doesn’t pair well with coffee. If you’ve ever had a light roast coffee and focused on the flavors, you might have noticed that it tastes fruity and tart.
Naturally, coffee beans take on some of the cherry pulp flavor, which ranges in tanginess and sweetness. The more the bean is roasted, the less you’ll taste in the resulting cup. However, this means that raspberries, which are naturally bright and sweet, highlight those flavors well!
It reinforces the natural coffee flavor and also adds a nice tart fruitiness that helps balance some of the bitterness. It’s one of my favorite pairings with coffee, and should be used more!

Here’s what you’ll need to make this delicious raspberry cheesecake latte at home!
- Fresh Raspberries — Red raspberries are best for this drink! The one from the grocery store works perfectly, or you can use different varieties based on your preference. Make sure there are no moldy ones! You can also use frozen raspberries.
- Milk — 2% or whole milk works best, but swap for your favorite non-dairy milk if desired.
- Ice
- Espresso — Use an espresso machine or stovetop espresso maker! You could even buy it from your local coffee shop if necessary, or swap for instant espresso powder.
- Heavy Cream — Your cream should have at least 30% fat; it won’t whip properly to a fluffy consistency. Half and half would not work here.
- Cream Cheese —Any cream cheese works! This is crucial for that cheesecake flavor, otherwise it will taste like regular sweet cream cold foam (still delicious, just not what we want here).
- Sugar — Powdered or regular granulated white sugar is ideal. You can also swap for light brown sugar, agave, maple syrup, or another sweetener. Note that it might taste slightly different if the sugar has a strong flavor.
- Vanilla (Optional) —Nothing like a little vanilla! You can use extract, bean, or bean paste.

- Macerate Raspberries. Wash raspberries and add them to a large cup or bowl, then add sugar. Smash the fruit using a muddler stick or spoon until it becomes a saucy consistency.
- Let the fruit and sugar sit until the juice draws out from the fruit. Since raspberries have a high water content, they won’t need to sit out for a long time.
- Brew Espresso. Brew 1 – 2 shots of your favorite espresso beans using an espresso machine, stovetop espresso maker, or pod coffee machine. You can also use instant espresso powder or coffee concentrate.
- Whip Cream Cheese Foam. Add cream cheese, sugar, and heavy cream to a small cup or bowl. Then, using a handheld frother, whip the cream until soft and fluffy but still pourable. It should have the consistency of a thick smoothie.
- Assemble Drink. Add ice, macerated raspberry, and milk to a separate glass, then top with your espresso, leaving an inch of space at the top. Then, add your whipped cream cheese topping and garnish with a few drops of raspberry sauce. Swirl the sauce and cream with a chopstick to get a marbled effect.
