To make it, just grind the pistachios until roughly ground, then blend in the melted white chocolate until it starts to come together. Add olive oil and continue blending until it forms a smooth, creamy paste.

Storage Tip: Store leftover pistachio cream in an airtight container in the fridge or on the counter for up to 2 weeks. Let it come to room temperature before using.

Can I Use Pistachio Syrup? If you don’t have pistachios or pistachio cream, you can use pistachio syrup as a substitute. However, syrups have an artificial flavor and lack the rich, creamy texture that real pistachios provide. It will still taste good, but less creamy and full-bodied.

The star of the show! This pistachio cold foam is one of my absolute favorites—it’s rich, creamy, and the perfect balance of sweet and savory. It tastes amazing on just about anything, from matcha lattes to coffee and even desserts.

Think of it as a pistachio-flavored sweet cream cold foam. Just mix 1–2 teaspoons of pistachio paste with heavy cream, a splash of milk, and your sweetener of choice. Then whip it up with an electric frother until it’s soft, fluffy, and cloud-like.

Note that the natural color will be more beige than green, since real pistachios are brownish on the inside. But if you’re going for that classic gelato-green look, feel free to add a drop of green food coloring!

  • 2 tbsp melted white chocolate
  • 1 tbsp olive oil

  • ½ tsp sweetener
  • Matcha Latte:
  • 1.5 tsp matcha powder
  • ¼ cup water
  • 1 tsp vanilla syrup
  • 1 cup ice
  • 1 cup milk
  • Chopped pistachios to garnish

  1. Add pistachios to food processor and grind for 1-2 minutes until coarsely chopped. Set aside 1 tsp chopped pistachios for garnish.
  2. Add white chocolate to food processor and grind for 1-2 minutes until finely chopped and starting to come together.
  3. Add olive oil to food processor and grind for 1-2 minutes until thick and paste-like.
  4. Add ½ tbsp of the pistachio paste, heavy cream, milk, and sweetener to a glass. Whip cream using a handheld frother for 10-15 seconds until soft and fluffy, but still pourable.
  5. Sift matcha powder into a matcha bowl, then add water. Whisk matcha with a bamboo whisk for 20-30 seconds in a zigzag motion until a foam with small bubbles forms on top.
  6. Add ice, vanilla syrup, milk, and whisked matcha in a glass, then top with pistachio cold foam.
  7. Garnish with chopped pistachios.

  • Soak Pistachios: Soak your de-shelled pistachios in water for 5 minutes before peeling the skin. It will make it 10x easier and faster since the skin softens. A chef’s trick is to place the soaked pistachios between towels and rub them back and forth to get the skins off in mass.
  • Mix Pistachio Cream into Milk: No heavy cream? No problem! Mix the pistachio paste directly into your milk using a spoon or frother to get the yummiest, nuttiest pistachio milk that’s perfect for your matcha.
  • Use Vanilla Bean: Vanilla extract or syrup is good, but vanilla bean will take this drink to the next level. You can use it straight from the pod or from a paste and mix it into your sweetener or milk. It rounds out all the flavors and makes the pistachio taste sweeter.
