A matcha cloud is just a fancy name for matcha cold foam. But the cloud comes from the way that it floats on top of tea or coffee. The “cloud” even rains if you let it sit, as the cream cascades down into brewed tea. It’s mesmerizing to watch!

But as most aesthetically pleasing food goes, this cloud idea came from social media.
Because it refers to the cream, the cloud can be used on anything from coconut water, tea, soda, etc. Just like this recipe that adds the matcha cloud to a peach jasmine green tea!

Do Matcha and Jasmine Tea Taste Good?

Some say that the jasmine overpowers the matcha flavor, but if you find the right balance, it’s actually pretty good! The floral flavors definitely make the matcha taste brighter and fresher, so if you’re someone who likes more umami flavor, you might not like this as much.

Peach Jasmine Tea Matcha Cloud: Ingredients You’ll Need

  • 1 tbsp jasmine tea
  • 1 cup water
  • 1/2 a yellow peach, diced
  • 1 sprig of mint (optional)
  • 1 tsp matcha powder
  • 1 tbsp water
  • 1/4 cup heavy cream 
  • 1 tsp sugar
  • 1 cup ice
  • 1/2 tbsp simple syrup (can also use peach syrup

How to Make a Peach Jasmine Tea Matcha Cloud

  1. Add tea, water, diced peach, and mint to a sealable jar or container and mix until all the leaves are submerged and wet.
  2. Leave tea in the fridge overnight or 16-24 hours. Remove from fridge and strain out the leaves, fruit, and herbs. Save the fruit to eat with oatmeal or yogurt. Chill the filtered tea until ready to use.
  3. Sift matcha powder into a small cup or bowl. Add 1 tbsp of water and mix with a spoon until a paste forms. 
  4. Add sugar and heavy cream, then whip for 10 – 15 seconds using a handheld frother until it becomes light and fluffy. It should have the consistency of a thick drinkable yogurt. 
  5. Add ice, syrup, and tea to a separate glass, then top with the matcha cold foam. Garnish with a slice of peach or a dusting of matcha powder.

Tips for the Best Drink

  • Don’t Over Whip the Cream: The key to a smooth and silky cloud drink is to make a fluffy cold foam that is still pourable. If you over-whip it, you’ll make matcha whipped cream (which is delicious), but not what we want for this recipe. To take it back to a cold foam, add a little more cream and milk, then re-whip until the desired consistency. 
  • Avoid Over-Brewing: Whether you cold brew or regular brew the tea, make sure to keep an eye on it so that the tea doesn’t overbrew and become bitter and astringent. We want a perfectly brewed tea that is smooth, light, and refreshing! Unfortunately, there’s no way to save overstepped tea.
  • Make Layers: The external appeal of this drink is its appearance! The name cloud doesn’t just come from anything! When the matcha cream floats, it’s like a cloud. To get the layers, you’ll want to pour the cream over ice and tea; that way, it reduces the impact it has and lets it float nicely.
  • Drink it immediately: Fat and water don’t like to mix, so if you leave this drink out, it will separate over time. I recommend consuming it within an hour of when it’s made so you get the smoothest texture and freshest flavor. Plus, I think it tastes much better cold than lukewarm. 

Substitutions and Variations

  • Use Peach Syrup: If you don’t have peaches or want to cold brew the tea, you can always use peach syrup instead and add it to freshly brewed jasmine tea for a quick hack. Use a store-bought version or make your own peach syrup! You can even use the juice from canned peaches.
  • Make it Vegan: Replace the heavy cream with a dairy-free or vegan whipping cream. It will taste almost identical and be dairy-free! You can also use a vegan-friendly sweetener like date syrup, monk fruit, or stevia as well. 
  • Use a Different Fruit: Not a fan of peaches? You can swap it out for strawberry, kiwi, mango, apples, etc. Any fresh and bright fruit that works with jasmine green tea will work here. 
  • Use a Different Tea: No green tea? No problem! I recommend swapping it for a lighter tea, like a white or oolong tea. Black tea might be too bold and overpower the fruit and matcha flavor. You want something that’s light and refreshing, that balances the fruit and earthiness.

Can I use different teas?

Of course! I recommend using a lighter or floral tea to replace jasmine green tea. Something like white tea or a Four Seasons oolong tea! This keeps this drink nice and light with a floral flavor.

Can you cold brew tea?
