It’s sweet, creamy, savory, and addictive, and super refreshing!

Here’s how to make this decadent mango sticky rice matha latte at home!

What is Mango Sticky Rice?

Any Thai restaurant will have mango sticky rice on their dessert menu, which is a well-beloved Thai dessert. It features sweet sticky rice and juicy mangoes with a salted coconut cream that, all together, is sticky, chewy, juicy, and soft. Texture aside, it’s fragrant and sweet, making it one of Thailand’s most popular desserts worldwide.

Now, I have no idea how it originated or who made it first, but it’s become so popular abroad that it’s synonymous with Thai cuisine.

How Do You Make Mango Sticky Rice?

To make mango sticky rice, steam glutinous rice in full-fat coconut milk and a little sugar. Then, make a salted coconut milk sauce with salt, sugar, full-fat coconut milk, and a little bit of rice flour or cornstarch to thicken it.

Slice up some mango and serve it on the fresh sticky rice, then drizzle the salted coconut sauce on top and garnish with some black sesame seeds or yellow mung beans.

Of course, this is just a general guideline for making sticky rice and mango, but any recipe you Google will work!

What is Mango Sticky Rice Matcha Latte?

This matcha latte is inspired by the ultimate street food dessert from Thailand, the classic steamed sticky rice and mango. It has whisked matcha, fresh mango puree, rice milk, coconut milk, and a salted coconut cream. It’s so creamy and dreamy, and it’s a fancier version of a classic mango matcha latte.

An added garnish of some thin slices of mango and black sesame seeds makes it look almost exactly like the dessert!

What Does Mango Sticky Rice Matcha Latte Taste Like?

This dessert-like drink tastes like an ultra-creamy mango matcha latte, which is jammy, slightly floral, juicy, with a slight umami finish that brings out the fruitiness. The added salted coconut cream adds a nice contrast to the sweetness and makes it complex. It tastes similar to ice cream or an affogato, but with matcha and mango.

So, you have that creamy, slightly fatty coconut with the fresh mango puree, all brought together by a smooth and umami matcha. They contrast each other nicely, but in an opposites-attract kind of way that makes it work so well! Kind of like how sweet and salty make such a perfect pair.

Do Mango and Matcha Go Together?

Mango and matcha are one of my favorite flavor combinations! It’s better than strawberry and matcha… The bold, earthy flavor of matcha contrasts nicely with the sweet, tropical notes of mango. It’s refreshing, earthy, smooth, and so addictive, especially in a latte.

Matcha and Fruit. Matcha naturally pairs well with fruits because the vegetal, slightly bitter undertones bring out the brightness and sweetness of fruit flavors, especially ones like mango that are juicy and aromatic. And I’m sure you’ve seen other flavor combinations like strawberry matcha, blueberry matcha, date matcha, etc.

What Milk to Use

As mentioned, sticky rice with mango is made from coconut milk and salted coconut cream. To emulate that same flavor in our matcha latte, use both rice and coconut milk as the base, and add a thickened salted coconut cream.

You can easily buy rice and coconut milk from the grocery store, but if you have white rice at home, you can easily make homemade rice milk! Just blend 1 cup of white rice with 1-2 cups of water, then strain until all the solids are out. If you have extra time, soak the rice in water for a couple of hours before using it so it’s softer.

Using the same method, you can make homemade coconut milk with plain shredded coconut and water. Make sure to strain it out for the smoothest milk!

You can add sugar or vanilla if desired, but I find it tastes best plain.

How to Whisk Matcha

You need to whisk matcha properly for an ultra-smooth and delicious matcha that isn’t clumpy or grainy.

First, sift matcha powder into a matcha bowl using a fine mesh strainer. (This breaks up clumps.) Add room temperature or hot water (not boiling, around 175°F) and whisk vigorously using a bamboo whisk in a quick zigzag or “M” motion.

Tip: Don’t add matcha into liquid without sifting it, otherwise you’ll end up with clumps that are hard to break up.

Whisk for 20–30 seconds, or a foam that looks like espresso crema—a light froth with tiny, tight bubbles—appears on top.

How to Make Mango Sticky Rice Matcha Latte

Ingredients:

  • Mango Puree
  • ¼ cup diced mango
  • 1-2 tbsp water
  • Mango Sticky Rice Matcha Latte
  • 1½ tsp matcha powder
  • ¼ cup water
  • ¼ cup coconut milk
  • ½ cup rice milk
  • 2-3 thin slices of mango (garnish)
  • 1 pinch black sesame seeds (garnish)
  • ¼ cup mango puree
  • 1 cup ice
  • Salted Coconut Cream
  • ½ tsp salt
  • ½ tbsp sugar
  • ¼ cup coconut milk
  • ¼ cup heavy or coconut cream

Mango Sticky Rice Matcha Latte Recipe

  1. Add mango and water to a small blender, then blend for 10 seconds or until the mango puree is smooth.
  2. Sift matcha powder into a matcha bowl, then add water. Whisk for 20-30 seconds in a zigzag motion using a matcha whisk until a foam with tight bubbles forms. See the matcha whisking tutorial here.
  3. Add salt, sugar, coconut milk, and heavy or coconut cream to a tall glass, then whip for 10-15 seconds using a handheld frother until the cream is soft and fluffy but still pourable.
  4. Add ice, rice milk, coconut milk, and whisked matcha to a glass, then top with the salted coconut cream. Garnish with mango slices and black sesame seeds.
  5. Mix and enjoy!

Notes

Honestly, I prefer how this tastes with regular milk versus rice and coconut milk as the base. It’s much creamier and carries the mango flavor better! 

Tips:

  • Make Homemade Milk: For an easy and healthy version, make homemade rice and coconut milk at home! Blend and strain dried (or soaked) white rice and water for rice milk, or shredded coconut and water for coconut milk. You may need to strain it multiple times to get all the residuals out.
  • Use Mango Jam: No mango on hand? No problem, you can use mango jam as a replacement for mango puree. Mango jam is extremely sweet, though, so you might want to use a tbsp at a time and taste as you go. You could also use frozen mangoes to make mango puree as well!
  • Use Ripe Mangoes: The riper the mango, the sweeter it is! Generally, Filipino, Indian, or red and yellow mangoes tend to be sweeter varieties, which work best for this drink. Try and pick mangoes that have a lot of color and are soft to the touch, but not squishy. If your mangoes aren’t as ripe, then you may add a little bit of sweetener to your puree to bring out the flavor.

    How do you make the sticky rice?

      Hi! I didn’t make sticky rice for this drink, but if you want to use it you’ll need glutinous rice, which you soak in water then steam! It would be great as a topping. I don’t recommend blending it into milk, though, as it will get very thick and gloopy.

    How do I make the rice milk? just rice and water? do i have to cook it before sieving it or raw?

      yes! it’s best if you soak raw rice in water and then blend and sieve for a smooth texture, but you’ll want to strain it multiple times or with a cheesecloth because otherwise it can be chalky. you can also use rice milk from the store if it’s easier! don’t cook the rice otherwise it’ll be gummy
