What is Cold Foam?

You might be confused about what cold foam means, since it’s used to mean multiple things. Most commonly, cold foam refers to a mixture of heavy cream, milk, and sugar that makes a fluffy drink topping. This cold foam is lighter than whipped cream, but thicker than traditional cold foam (frothed milk).

Starbucks popularized this fluffy cold foam topping, otherwise known as sweet cream cold foam, debuting this popular drink add-on in the mid-2010s.

Traditionally, cold foam means frothed cold milk, which has a fluffy, velvety texture, similar to te texture of steamed milk. But if you go to a cafe and see menu items with cold foam, chances are it’s referring to the former with cream in it.

What is Lavender Cold Foam Made Of?

Lavender cold foam is made of heavy cream, 2% milk, and lavender syrup! Sometimes, you’ll also find food coloring in it for that gorgeous lilac color. When whipped, it becomes a light and fluffy foam that’s sweet and creamy with a hint of lavender flavor and aroma.

You can also make this cold foam with lavender extract or bitters and sugar if you don’t have lavender syrup on hand.

What Does Lavender Cold Foam Taste Like?

No, lavender doesn’t taste like soap (at least to me!) This lavender foam is sweet, creamy, with a balanced floral note and flavor. Lavender has a distinct floral note that can lean into mint and rosemary-like, with a slightly herby, bitter, and citrusy flavor!

The cold foam tastes like lavender ice cream, which makes sense since it includes all the ingredients that make ice cream. It’s perfect on coffee, matcha lattes, milk teas, and more.

How to Make Sweet Cream Cold Foam

Sweet cream cold foam is the base of all flavored cold foams! It’s just 3 parts heavy cream, 2 parts milk, and 1 part sweetener. (This is the ratio that Starbucks uses!)

I like to use 1/4 cup of heavy cream, 2 tbsp milk, and 1 tsp of sweetener. I find that this is nearly identical to what Starbucks uses and gets you that fluffy and light cream that’s not too dense.

You can use an electric frother or mixer to whip the cream, or you can also use a blender but I find that the blender is best for large amounts while a frother is perfect for a single serving.

How to Make Lavender Syrup

Lavender syrup is the key ingredient in this lavender sweet cream cold foam and it’s fairly simple to make at home! All you need is sugar, water, and culinary grade dried lavender buds.

First, make simple syrup using equal parts sugar and water (you can use less sugar if you’d like). This will make the base for your lavender simple syrup. Just dissolve the sugar in hot water and let it reduce until you get your desired consistency.

Turn the heat off, and while hot, add your dried lavender buds and let the mixture steep for at least 10 minutes. You can also steep this overnight for a bold lavender flavor.

Once it’s done steeping, remove the lavender buds and bottle your syrup in an airtight jar or bottle. It will keep fresh in the fridge for 2-3 weeks.

Here’s what you’ll need to make fluffy lavender cold foam at home:

  • ¼ cup heavy cream
  • 2 tbsp 2% milk
  • 1 tsp lavender syrup

  1. Make or Buy Lavender Syrup. To make lavender syrup, make simple syrup by dissolving equal parts sugar and water on the stove, then, while still hot, steep dried lavender buds until aromatic. Let cool, then store in an airtight container in the fridge.
  2. Whip Cold Foam. Add heavy cream, 2% milk, and lavender syrup in a tall cup or bowl. Using an electric frother, whip the cream until light and fluffy. The cream should double in size and still be pourable, not stiff.
  3. Use and Enjoy! Top your drinks with lavender cold foam and enjoy!

How to Make Vegan Cold Foam

Not a dairy gal or lactose intolerant? You can easily make this dairy-free by swapping the heavy cream for a dairy alternative like coconut cream, oat cream, or vegan heavy cream. You can use any milk you’d like, from lactose-free milk, oat milk, soy milk, etc.

The syrup itself is already dairy-free, but you can make it sugar-free by using alternative sweeteners like monkfruit, agave, or even honey. You can make lavender-flavored versions by steeping the dried lavender in those versions of simple syrup.

Once you whip up your ingredients, it should still have a fluffy consistency perfect for topping your drinks.

Here are some tips for making the best lavender cold foam at home!

  • Use High-Quality Heavy Cream: Obviously, good quality ingredients make great cold foam, but seriously, using a good heavy cream makes a huge difference. I find that some of the generic heavy cream brands have a weird aftertaste which ruins the drink for me. Even though it’s more expensive, I always splurge on good heavy cream from local dairy farms that make top quality cream! (My favorites are from Straus and Rosa Brothers.) It tastes like heaven!
  • Add Food Coloring: If you make lavender cold foam with homemade syrup (or even storebought), the foam color will be white, or maybe ever so slightly pink or purple. For a nice purple color, add food coloring which makes it look more appetizing! But remember, a little goes a long way!
