What is a Lavender Cold Foam Matcha Latte?

This drink is an iced matcha latte with a fluffy lavender cold foam on top. It’s sweet, floral, slightly fruity, and creamy, with a pleasant earthy taste. It also has a nice contrast in color, from the vibrant green matcha to the soft purple cold foam.
It’s a popular drink combination that Starbucks popularized with its iced lavender cream oatmilk matcha in 2024.
What Does a Lavender Cold Foam Matcha Latte Taste Like?

For some reason, matcha and floral flavors end up making something that tastes like fruity pebbles! Like the bergamot in an earl grey matcha latte mixes with matcha and it tastes like fruity pebbles! This tastes like the sweet, fruity cereal but with a floral twist.
The cold foam also makes it extra creamy and delicious, and it has an almost ice cream quality to it, but lighter. First, you get the sweet floral notes from the lavender, which then gives way to the earthy matcha latte.
Do Matcha and Lavender Go Together?
Thereās a reason why lavender matcha lattes are popular, especially during the spring time when the weather warms up and floral flavors shine!
Matcha has a nice earthy, slightly bitter, and umami flavor profile that works nicely with contrasting flavors. Lavender has a unique floral taste that is forward yet subtle, which perfectly balances matcha. You may even find that lavender has similar qualities to mint, rosemary, and thyme, which are quite herbacious and fresh.
Lavender and matcha work nicely together, but there definitely needs to be a balance, otherwise, too much lavender can quickly overhwhelm the matcha.
How to Make Sweet Cream Cold Foam

Sweet cream cold foam is the base of all flavored cold foams! The perfect ratio is 3 parts heavy cream, 2 parts milk, and 1 part sweetener. (This is the ratio that Starbucks uses!)
I like to use 1/4 cup of heavy cream, 2 tbsp milk, and 1 tsp of sweetener. I find that this is nearly identical to what Starbucks uses and gets you that fluffy and light cream thatās not too dense.
You can use an electric frother or mixer to whip the cream, or you can also use a blender but I find that the blender is best for large amounts while a frother is perfect for a single serving.
How to Make Lavender Cold Foam

Lavender cold foam is made of heavy cream, 2% milk, and lavender syrup! You can also add food coloring for a gorgeous lilac color.
Lavender syrup is the key ingredient in this lavender sweet cream cold foam and itās fairly simple to make at home! All you need is sugar, water, and culinary grade dried lavender buds.
As mentioned, you’ll want to use an electric frother to make the cold foam and it’s perfect for a single serving. Make sure you use a tall glass so that the foam doesn’t splash everywhere.
Whip your cold foam until it doubles in size and is light and fluffy. You want it to be pourable and not stiff like whipped cream.
What Matcha to Use
Matcha powders all have different flavor profiles, ranging from sweet and creamy to umami and earthy. For this drink, a medium-bodied matcha powder would taste best! A sweet and creamy matcha powder could also taste great with lavender, but it might be too mild and be overpowered by the lavender cold foam.
A medium bodied, slightly umami matcha would balance the cold foam perfectly. Some examples include Matchakari’s ceremonial matcha powder, Marukyu Koyamaen’s wako, Rocky’s ceremonial blend, or Ippodo’s Ummon (more punchy).

How to Make a Lavender Cold Foam Matcha Latte

Here’s what you’ll need to make a creamy lavender cold foam matcha latte at home:
- Lavender Cold Foam:
- 1 tsp lavender syrup
- ¼ cup heavy cream
- 2 tbsp 2% milk
- Matcha Latte:
- 1½ tsp matcha powder
- ¼ cup water
- 1 cup milk
- 1 cup ice
- 1 tsp sweetener (optional)
Lavender Cold Foam Matcha Recipe
- Make Lavender Cold Foam. Add heavy cream, milk, and lavender syrup to a tall glass or bowl, and using an electric frother or mixer, whip the cream until it doubles in size. The cold foam should be light and fluffy and still pourable, not stiff.
