This flavor combination is quite popular in the dessert world, like Salt and Straw’s honey lavender ice cream, in cheesecake, regular cakes, and more. However, in coffee, I feel it’s more of a recent phenomenon, and I saw it sprouting up when I was in high school or early college (somewhere around 2016 to 2018?)

Now, you can find this flavor at pretty much any specialty coffee shop, especially during spring. It’s a very sweet, floral, and soft flavor that many people can like! It’s not too overpowering nor offensive to the palette.

The flavor is soft, herbal, floral, earthy, and soothing. Honey and lavender are medicinal ingredients that you often see in cough drops or home remedies for coughs. It’s good to note that most lavender-flavored drinks are made with culinary lavender, which is much more subtle than regular lavender. The former is much milder, sweeter, and herbaceous.

Here’s what you’ll need for this honey lavender latte:

  • Honey Lavender Syrup — I make my own honey lavender syrup, which is super easy and takes less than 10 minutes. However, you can use any brand you have or buy it from the grocery store.
  • Espresso — Brew your favorite beans with an espresso machine. You can also substitute it with instant espresso powder and water, coffee concentrate, a moka pot espresso, etc.
  • Milk — I love dairy, so I use 2% or whole milk, but you can use any milk you’d like.
  • Ice

  • Heavy Cream — 35% milkfat or higher is best for cold foams. Something like half and half won’t froth up properly.
