Happy Earth Day! As cafes and shops create their Earth Day matcha latte, you can easily create it at home with some chocolate, blue tea, and matcha! Now, this definitely looks better than it tastes, but it’s always so fun to make, especially if you need a themed drink.
I love how versatile butterfly pea tea and matcha are, and they are the perfect teas to create an image of the ground and sky!
So, here’s how to make a beautiful Earth Day matcha latte at home!
What is an Earth Day Matcha?

Imagine a sunny day and a beautiful meadow encapsulated in a drink. The matcha latte has white chocolate clouds that, with the blue tea, look like a blue sky. With the whisked matcha on the bottom of the glass, you get a slice of a sunny day with green grass!
There’s no really special flavor for an Earth Day matcha, it’s more for aesthetics than anything. However, you can still make it taste somewhat good with some vanilla or other flavors.
Butterfly pea tea makes the milk blue and has a very herbal and earthy taste. It’s an herbal tea made from steeping the blue butterfly pea flowers, which are high in antioxidants. Honestly, it tastes like dirt (lol), which is ironically fitting.
However, instead of butterfly pea flowers, you can also use blue spirulina, which is actually a nutritious algae. It has a more umami flavor, but is still earthy, similar to matcha.
This recipe uses butterfly pea tea flowers!
How to Make Clouds

For the clouds portion of this drink, I paint melted white chocolate on the walls of the glass to create a sturdy chocolate cloud that won’t move with liquid or ice. I’ve seen people use yogurt and marshmallow fluff, but I find white chocolate the easiest to work with.
To properly use it, melt the white chocolate in a bowl either using a double boiler method or heat it in the microwave for 15-20 second increments at a time. With chocolate, you want to slowly melt it so it’s smooth. If you heat it for too long, you could end up drying it out or burning it, which ruins the texture.
Making the clouds sounds easy, but it’s harder than it looks. For the best shapes, start with a little bit of chocolate on the back of your spoon and carefully push it into a cloud shape. Any excess chocolate will start dripping either down the side of the glass or into your spoon, so start small and gradually add when needed.
How to Make Blue Milk

For the sky, I brew the butterfly pea tea and then add the milk into it until I get the right color. Typically, this is about half a cup of tea to about a cup of milk. You may have to experiment with how much tea you use, depending on how blue your milk turns.
You can also use butterfly pea tea powder, which is even easier to use. Just blend or mix it directly into your milk, and you get a super blue milk without having to brew anything! Since you’re mixing in the entire flower, start with a teaspoon and gradually add if needed.
If you use spirulina powder, it’s the same process as using butterfly pea tea flower powder.
How to Make Layers
Now, for the most important part, making the different layers!
The matcha needs to stay at the bottom of the glass for the illusion, so add it first, along with your ice. For security, you can also mix some sugar or sweetener into the matcha to give it a higher density.
Then, slowly add your blue milk directly onto ice, making sure not to pour it into the matcha on accident. This will absorb the impact of the milk and allow it to slowly create a layer on top of the matcha.
If you accidentally pour the milk onto the matcha, the two teas will blend together and you’ll end up with a muddy, blue-green drink.

Earth Day Matcha Latte Recipe
- Paint Clouds. Melt white chocolate in a double broiler or in 20-second spurts in the microwave, stirring between each session. Using a spoon, gently paint white cloud shapes of white chocolate on the sides of the glass. If you make a mistake, use your finger to wipe away the extra chocolate. Repeat until you have clouds all around the glass.
- Make Blue Milk. Brew the butterfly pea tea in a heatproof glass for 3-5 minutes until you get a dark blue tea. Then, add milk until you get a light blue color. Stir to combine.
- Whisk Matcha. Sift matcha powder into a matcha bowl, then add water. Using a bamboo whisk, vigorously whisk the matcha in a zigzag motion until you get a foamy top layer. You want small, tiny bubbles close together and a velvet-like foam. Dissolve in your sweetener and set aside.
- Assemble Drink. Add ice, extra sweetener, and matcha to a glass, then gently pour your blue milk directly onto the ice to create a meadow and sky.
- Mix and Enjoy!

Tips:
Trying to make this at home, but need some pointers or want to improve this recipe? Here are some tips that can take your drink and skills to the next level!
- Pour Slowly: To really nail the Earth and sky look in this latte, you need to pour your liquids slowly and on ice for it to layer properly. You can add the matcha normally, but add the blue milk slowly and on ice so as not to mix the matcha and milk together.
- Use White Chocolate Syrup: You’re already using white chocolate for the clouds, so why not use it to flavor your drink too? It has a sweet, creamy, and subtle vanilla flavor, which is perfect for masking any dirt-flavored butterfly pea tea.
- Use Butterfly Pea Powder: If milk isn’t blue enough even after brewing your tea more, you can try using butterfly pea tea powder, which is concentrated and will make your milk blue.
