You may have seen the coconut matcha cloud go viral a couple of months ago, which is chilled coconut water and ice topped with a matcha cream or cold foam. It’s surprisingly refreshing and delicious, with a subtle earthy flavor from the matcha.
This coconut Thai tea cloud drink is a Thai tea rendition of that drink! Instead of matcha, it uses Thai tea instead in the cream and makes a soft, light orange cream that sits on the same bed of coconut water.
Although this recipe uses Thai tea syrup instead of a Thai tea concentrate, because it’s more concentrated than just brewed tea.
What Does a Coconut Thai Tea Cloud Taste Like?

This coconut Thai tea cloud tastes like a creamy and refreshing Thai milk tea with a slight savoriness from the coconut water. It’s such a good combination, and you get both an energizing boost and a hydrating factor from the coconut water.
Thai tea is slightly vanilla-y and sweet milk forward, with a nice bold black tea that is slightly bitter. Mixed with the cream, it’s much more balanced and fragrant, and with the coconut water, it’s super creamy but not heavy.
Honestly, on a hot day, this would be so refreshing.
Is the Coconut Thai Tea Cloud Vegan?
The default recipe is not vegan, as it includes heavy cream.
However, although this coconut Thai tea cloud is not vegan by default, you can make it vegan by using a plant-based or dairy-free cream alternative!
Coconut cream is the best substitute for this drink since it complements the coconut water well. It also whips up fairly nicely, and you’ll end up with a soft and fluffy foam.
You could also use oat cream or vegan heavy cream, and they’ll also give you a fluffy result! Flavor wise, the oat cream may give you a slightly different flavor and may affect the final flavor.
How to Make Thai Tea Syrup
Thai tea syrup is super easy to make and takes less than 10 minutes.
You only need 3 ingredients: Thai tea leaves, sugar, and water.
First, brew Thai tea for 5-10 minutes or until the tea is extracted fully. You can do this in a teapot, or mug, or a small pot for convenience. Then, combine the brewed tea, sugar, and water in a small pot and heat until the sugar dissolves. Reduce the syrup until you get your desired consistency. If you want it thicker, reduce it for longer or add more sugar than water.
For a runnier syrup, reduce for a shorter time and add more water than sugar.
Once cool, store it in an airtight container in the fridge for up to 3 weeks (trust me, it takes a lot for syrup to go bad.)
How to Make Thai Tea Cream

Thai tea cream or cold foam is super easy to make (do you see a trend, haha)! Like the syrup, you’ll only need 3 ingredients: Thai tea syrup, heavy cream, and milk.
Just combine all the ingredients in a tall glass or bowl (so it doesn’t splatter you) and whip it with an electric frother or mixer until soft and fluffy. You want it to be double in size and pourable.
If you want a thicker cream, you can omit the milk to make a thicker Thai tea cream that’s more like whipped cream (compared to a sweet cream cold foam). Just whip the two ingredients until they’re a thick, smoothie consistency so it’s still pourable. You can also whip it all the way to Thai tea whipped cream, which you’ll have to spoon onto the drink.
Note: The whipped cream will be harder to mix into the drink compared to the cold foam or softly whipped cream.
Best Coconut Water to Use
If you have fresh coconut on hand, crack it open and use the coconut water inside it! That’s the best, freshest coconut water you’ll get, and it will make a huge difference in this drink!
That being said, coconuts are expensive if they’re imported and many times not as fresh. The next best alternative (and more accessible) is using boxed coconut water, and any brand works. I truly think most coconut waters taste very similar, give or take small differences in taste and texture.
