I know that this combination was a popular Starbucks secret menu: a matcha latte and a cherry cold foam topping. I’m not sure how it tasted, but this version is fresh, not too sweet, and perfectly balanced.

  2. Whip Cherry Cream. Add cherry syrup and heavy cream to a cup or bowl. For a brighter pink color, add beetroot powder. Using a handheld frother, whip the cream until it doubles in size and is fluffy. It should still be pourable, not stiff.
  3. Whisk Matcha. Sift matcha powder into a matcha bowl and add hot water at around 175°F. Vigorously whisk using a matcha whisk in a zigzag motion until the tea is frothy. There should be a thin layer of velvety microfoam with small, tight bubbles.
  4. Assemble Drink. Add ice, cherry syrup, and milk to a separate glass. Add the whisked matcha on top, and stir until well-combined. Then, add your cherry cream on top and garnish with a single red cherry with the stem.
