Here’s how to make Tiger milk tea, or brown sugar milk tea with boba, at home!
What is Brown Sugar Milk Tea (Tiger Milk Tea)?
Brown sugar milk tea, or tiger milk tea, is a creamy, sweet boba tea flavor that has taken the world by storm. It is made with fresh milk, brown sugar boba, and plenty of ice for a refreshing treat. The drinkâs defining flavor comes from its brown sugar syrup, which is rich, caramel-like, and slightly smoky.
The tapioca pearls, or boba, are simmered in this brown sugar syrup until theyâre chewy and fully infused with its sweet, toasty flavor. When served with chilled milk and ice, the result is a perfectly balanced drink that combines the creaminess of milk with the depth of caramelized sugar.
Originally invented by the famous Taiwanese chain Tiger Sugar in 2017, Tiger Milk Tea quickly became a viral sensation across Asia and beyond. Itâs known for its signature brown âtiger stripes,â which form when the syrup coats the inside of the cup.
While the official name is âTiger Milk Tea,â itâs often also called brown sugar milk tea with boba, which hints more directly at its ingredients. Now, this drink is a beloved choice in boba cafes worldwide.
Why is it Called Tiger Milk Tea?

Tiger Milk Tea gets its name from the iconic brown sugar âstripesâ that form when the syrup coats the inside of a clear cup before milk is poured in. These bold stripes resemble tiger markings against the fresh, white milk. The dark brown sugar syrup slowly drips when the cold milk is added to the cup.
To create this effect, brown sugar syrup is typically poured into an empty cup, then swirled around to coat the sides, ensuring the âstripesâ are evenly distributed. When the milk is poured over the ice, the stripes stay visible for a few moments before blending together for a marbled, almost latte-like look. The drink is visually striking, just as satisfying to look at as it is to drink.
What Does Brown Sugar Milk Tea Taste Like?
Brown sugar milk tea is deeply caramel in flavor, with a sweet and roasted taste, paired with fresh and smooth milk. Caramelizing brown sugar has a more robust flavor than regular caramelized sugar.
The brown sugar becomes almost smokey and has a very rich and deep flavor, balancing perfectly with milk. Because of the caramelized brown sugar, this drink has a unique and distinct aroma you won’t find in any other drink.
When you drink tiger milk tea, the first taste is sweet milk, followed by a rich caramel flavor, and then the sweet and chewy tapioca pearls. It’s especially delicious when the boba is warm, so you get a delicious contrast in temperature and texture, similar to having cold vanilla ice cream on warm apple pie.
Does Brown Sugar Milk Tea Have Caffeine?
Despite being called âbrown sugar milk tea,â tiger milk tea usually doesnât contain any caffeine. The traditional recipe is made with fresh milk, brown sugar syrup, and chewy tapioca pearlsâno tea involved.
The name is more about marketing than ingredients, as âbrown sugar milk teaâ sounds more enticing and exotic than simply âbrown sugar milk.â This can be confusing, especially since it sounds like it includes a standard tea base like black or green tea.
That said, some boba shops sell brown sugar milk tea with actual black tea as an option for customers who enjoy the added tea flavor. For this reason, itâs always a good idea to check with the cafe or read the menu description to be sure. That way, you don’t get surprised when you order a drink you think has or does not have tea.
What is Brown Sugar Milk Tea Made of?
The traditional tiger milk tea is only fresh milk, caramelized brown sugar boba, and ice, but sometimes, it can have tea. The caramelization is a very important part of this drink, which gives it its unique aroma and taste.
If you use regular brown sugar syrup in this drink, it will still taste good, but it won’t have the distinct flavor Tiger milk tea is known for (and it doesn’t taste as good, in my opinion).
You can attempt to caramelize brown sugar like how you caramelize regular sugar. Give it a taste after you make it to taste the difference!
Some cafes also offer dairy-free alternatives like oat milk or other plant-based milk, which blend well with the brown sugar syrup for a dairy-free twist on this classic.
Is Brown Sugar Milk Tea Healthy?

While tiger milk tea, and basically any milk tea, is so delicious and sweet and creamy, bubble tea is actually not a very healthy drink. Tapioca pearls are all carbohydrates, and one serving can pack a punch of upwards of 300 calories.
If you factor in sugar and milk, each bubble tea drink can be anywhere from 300-500 calories per cup. It’s a known fact that sugary drinks are one of the worst foods you can have, as they spike your insulin to unsustainable levels and also increase your risk of heart disease.
So, if you do order a tiger milk tea, if you’re conscious about your health, you can always ask for less sugar, but most shops have a set recipe they have for their brown sugar boba milk tea, although it doesn’t hurt to ask!
How to Make Brown Sugar Milk Tea

Here’s what you’ll need to make brown sugar milk tea:
- Tapioca pearls
- Water
- Brown sugar (or caramelized brown sugar syrup)
- Milk
- Ice
Brown Sugar Milk Tea Recipe
- Make tapioca pearls. Boil tapioca pearls in water for 2 minutes, then simmer on medium heat for 25-30 minutes, covered, until the boba is soft and chewy. Drain and rinse the pearls in cold water.
- Sweeten tapioca pearls. Add brown sugar and water in the same pot and boil until the sugar dissolves. You can attempt caramelizing the sugar, but brown sugar has impurities that burn before it caramelizes. Add the tapioca pearls and let them soak in the warm sugar syrup for 10-15 minutes until sweet.
- Caramelize pearls. Heat pearls and sugar syrup until the water evaporates, leaving you with a viscous syrup.
- Assemble drink. Add brown sugar boba and ice to a separate cup, then pour in your fresh milk.
- Mix and enjoy!
How to Make This With Tea
To make tiger milk tea with tea, brew a concentrated tea using your favorite tea. Black tea or stronger-tasting teas work best with this drink since they balance the strong caramel flavor from the brown sugar boba.
The drink will become light brown versus white, which is normal. The drink will also be less creamy and thinner since the brewed tea adds water, which dilutes the milk.
The tea and brown sugar work nicely, though, and it’s a nice pick-me-up!

Tips
Here are some tips for making a sweet and creamy tiger milk tea (brown sugar milk tea with boba) at home!
- The fresher the milk, the better the drink! Since milk is the main component of this drink, using high-quality milk matters, which is usually sweeter, creamier, and better for you.
- For convenience, you can use pre-caramelized brown sugar to save time. You can buy it from some Asian grocery stores or local cafes!
- For that distinct brown sugar flavor, try adding a little molasses to the brown sugar syrup for a smoky flavor.
- Once you add tapioca pearls to the brown sugar syrup, the additional starch helps gelatinize the syrup, which you can use to add stripes to your cup.
