You can either boil the syrup or make a macerated version, which basically means drawing out banana juices by letting a mixture of banana, spices, and sugar sit out for 8-10 hours.

For the cooked version, toss in chopped or blended banana, spices, water, and sugar into a pot, then cook on medium heat until you reach your desired consistency. (Amounts below!)

Let the syrup cool, then store it in an airtight container in the fridge for up to 2 weeks.

  • 2 slices of banana (garnish)

  1. Mash or blend bananas in a blender until smooth, then add to a small pot with water, sugar, and spices. Simmer on low to medium heat until you get the desired consistency. Cool and store in an airtight container in the fridge for up to 2 weeks.
  2. Sift matcha powder into a chawan, then add water. Whisk matcha in a zigzag motion for 20-30 seconds with a chasen until a foam with small bubbles forms.

I used pumpkin spice because it has cinnamon and a bunch of other warm spices, but feel free to just use cinnamon, nutmeg, and cloves for a purer taste.

Tips:

  • Use Ripe Bananas: If you have really ripe bananas, that’s perfect for this recipe. The riper the banana, the more flavorful your syrup! You can use bananas that are very mushy and turning black. Young bananas won’t have as much sweetness or flavor, and will give you an unpleasant starchy aftertaste.
  • Add Vanilla: To make the banana bread syrup or bread-like, add a little bit of vanilla syrup after it’s cooled. This will give it an aromatic flavor reminiscent of pastries! You could even boil actual banana bread if you wanted for a *true* banana bread flavor.
  • Make Macerated Syrup: Sometimes, boiling bananas gives it a starchy aftertaste. For a strong and smooth natural banana flavor, make a macerated syrup by cutting the banana into small chunks, letting it hang out with some sugar, and setting it aside on the counter or fridge until the juices draw out. This gives you a delicious banana syrup without cooking!
